A signature characteristic of the male maw is its saddle-shaped body—thick in the center and thinner along the edges—featuring distinct herringbone wave patterns on the surface and pale white lines running down both sides, which serve as the industry standard for identifying authentic male fish maw. Compared to female fish maw from the same region, male maw offers a firmer, bouncier texture that holds its shape without disintegrating or melting during long double-boiling.
